Baked Feta & Chickpea Tomato Pasta

Ingredients:
250g cherry tomatoes
1 can (400g) chickpeas, drained & rinsed
1 block (200g) feta cheese
3 cloves garlic, minced
2 tbsp olive oil
1 tsp dried oregano
½ tsp chili flakes (optional)
Salt & pepper to taste
250g whole wheat or chickpea pasta
Fresh basil for garnish
How to Make It:
1️⃣ Bake the Feta & Chickpeas:
Preheat oven to 200°C (400°F).
Place cherry tomatoes and chickpeas in a baking dish.
Drizzle with olive oil, garlic, oregano, chili flakes, salt, and pepper.
Nestle the feta block in the center and drizzle with a little more olive oil.
Bake for 25-30 minutes until tomatoes burst and feta is golden.
2️⃣ Cook the Pasta:
While the feta bakes, cook pasta according to package instructions. Reserve ½ cup pasta water.
3️⃣ Mix & Serve:
Mash the feta and tomatoes together to create a creamy sauce.
Toss in the cooked pasta, adding reserved pasta water if needed.
Garnish with fresh basil and enjoy!
