Chicken Mince Kebabs
Chicken mince kebabs are one of my absolute favorite dishes. I love them in so many different ways—served with pasta, made into burger patties, in shawarmas, or in a spicy chutney with rice, or naan. The flavors are always spot on!
Ingredients:
500g chicken mince (ground chicken)
1 medium onion, finely chopped
2 cloves garlic, minced
1 tablespoon fresh parsley, chopped
1 tablespoon fresh coriander, chopped
Handful of spinach (optional)
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon paprika (optional for color and mild heat)
1 teaspoon garam masala
Salt and pepper, to taste
1 tablespoon olive oil or ghee
1 egg (optional, to help bind)
Lemon wedges (for serving)
Skewers (wooden or metal - optional)
Instructions:
Prepare the Chicken Mixture:
In a large mixing bowl, combine the chicken mince, finely chopped onion, garlic, parsley, coriander, cumin powder, coriander powder, paprika, garam masala, salt, and pepper.
Add the egg if using (it helps bind the mixture) and mix everything thoroughly. The mixture should be moist but not too sticky.
Shape the Kebabs:
Take small portions of the mixture and mold them around skewers. You can shape them into a long, cylindrical form or a more traditional rounded kebab shape. You can make them into shapes without skewers too.
If the mixture feels too loose, chill it in the fridge for 15-20 minutes to firm it up.
Cook the Kebabs:
Grill Method: Preheat a grill or barbecue to medium-high heat. Brush the skewers with olive oil or ghee to prevent sticking. Grill the kebabs for 6-8 minutes on each side, until golden brown and cooked through.
Pan-Fry Method: Heat a little oil or ghee in a large skillet over medium heat. Cook the kebabs for about 4-5 minutes on each side, until golden brown and fully cooked.
Air Fry Method: Preheat your air fryer to 180°C. Lightly brush the kebabs with olive oil or ghee and place them in the air fryer basket. Cook for 8-10 minutes, flipping halfway through, until golden brown and cooked through.
Serve:
Once cooked, remove the kebabs from the skewers and serve with lemon wedges on the side. You can also serve them with a side of fresh salad, naan bread, or a cooling yogurt dip.
