Garlic & Chilli Prawns Spaghetti
Ingredients:
150g Spaghetti
200g Prawns, King prawns, tiger prawns, or shrimp, peeled and deveined
3 cloves Garlic, finely chopped
1 tsp Chilli Flakes (adjust to your spice preference)
2 tbsp Butter
1 tbsp Olive Oil
2-3 tbsp Fresh Parsley, finely chopped
1 tbsp Fresh Lemon Juice
1 tsp Salt (or to taste)
½ tsp Black Pepper (or to taste)
1 cup Reserved Pasta Water (from cooking the pasta)
30-40g Parmesan Cheese (or any hard cheese), finely grated, for serving
3-4 tbsp Parmesan Cheese (or any hard cheese), finely grated, for serving
Instructions:
1. Cook the Spaghetti
Boil a pot of salted water and cook the spaghetti according to the package instructions. Be sure to reserve one cup of pasta water before draining.
2. Cook the Prawns
While the pasta is boiling, heat a pan and melt 1 tablespoon of butter. Sauté the prawns until they turn pink and are fully cooked, seasoning with salt and pepper. Remove the prawns from the pan and set them aside.
3. Prepare the Sauce
In the same pan, melt another tablespoon of butter over low-medium heat. Add the finely chopped garlic and sauté briefly before adding the chili flakes. Stir for a few seconds to release the flavors.
4. Combine
Add the cooked spaghetti to the pan, followed by half a cup of the reserved pasta water. Season with salt and pepper to taste. Stir well to combine and allow the pasta to absorb the flavors.
5. Finish
Return the prawns to the pan, mixing them evenly into the pasta. Drizzle with olive oil and toss in the fresh parsley for an added burst of flavor and color.
6. Serve
Plate the pasta and top with grated Parmesan or your preferred hard cheese. Garnish with extra fresh parsley and a squeeze of lemon juice to finish.
