Spicy Mango & Cucumber Salad
Ingredients:
1 ripe but firm mango, chopped
1 large cucumber, thin round slices
Sprinkle of chilli flakes (to taste)
1 clove garlic, grated
Juice of 1 lime or lemon
1–2 tsp soy sauce
1 tsp brown sugar (adjust to taste)
Fresh basil, roughly chopped
Handful of walnuts
Sesame seeds to sprinkle
Instructions:
In a large bowl, combine mango, cucumber, garlic, and basil.
Add soy sauce, lime juice, and brown sugar. Toss gently.
Sprinkle with chilli flakes, walnuts, and sesame seeds.
Chill for 5–10 minutes to let the flavours blend.
Serve immediately and enjoy that zingy, sweet, crunchy magic
