Stuffed Bell Peppers
Meat Version: Spiced Mince + Rice + Veg
Ingredients:
4 bell peppers (halved or tops cut off)
250g beef or chicken mince
1 cup cooked rice
1 grated carrot
½ grated zucchini
1 small onion, chopped
1 clove garlic, minced
1 tsp cumin or taco spice
Salt, pepper, olive oil
Optional: grated cheese for topping
Method:
Sauté onion and garlic in olive oil.
Add mince and cook until browned.
Stir in grated veg, cooked rice, and spices.
Stuff mixture into bell peppers.
Top with cheese (optional).
Bake at 180°C for 25–30 mins until peppers are soft.
Veg Version: Quinoa, Black Beans & Veggies
Ingredients:
4 bell peppers
1 cup cooked quinoa
1 cup black beans (cooked or canned, drained)
1 grated carrot
½ cup corn or chopped mushrooms
1 clove garlic, minced
1 tsp smoked paprika or cumin
Salt, pepper, olive oil
Optional: sprinkle of feta
Method:
Sauté garlic, grated carrot, and corn/mushrooms in olive oil.
Stir in quinoa, black beans, and spices.
Spoon into peppers and bake at 180°C for 25–30 mins.
Top with feta or avo slices before serving if desired.
