This is one of my favourite childhood meals. Makes me think of my mum and the love she made this with.
A big pot bubbling away on the stove, the smell of curry filling the house long before supper was ready. The pasta would soak up all that delicious sauce, and somehow every plate tasted better than the last.
I've been thinking about it lately and decided to recreate it.
Ingredients:
500g chicken pieces, cubed
1 onion, finely chopped
2 cloves garlic, crushed
1 tbsp curry powder
1 tsp turmeric
1 tsp paprika
1 tbsp tomato paste
1 tin chopped tomatoes
1 cup chicken stock
Salt and pepper to taste
250g macaroni or shell pasta
Fresh coriander (optional)
Method:
Fry the onion until soft and golden.
Add the garlic, curry powder, turmeric and paprika. Cook for a minute until fragrant.
Add the chicken and brown lightly.
Stir in the tomato paste, tomatoes and stock.
Simmer gently for 20 to 30 minutes until the chicken is tender and the sauce has thickened.
Cook the pasta separately and drain.
Stir the pasta through the curry sauce and allow it to sit for a few minutes so the flavours can mingle.
Serve warm.
Simple. Comforting. The kind of meal that feels like a hug from the past. 🍝✨
